This side dish is one of my go to recipes and it’s always a welcomed item to pass at parties. It’s sweet, creamy, nutty, and the broccoli helps you pretend it’s a little healthy. I haven’t tried it yet, but I think it would be really good using greek yogurt (instead of mayo), with less sugar and less vinegar. What You’ll Need
12 oz bacon
2 heads of broccoli
1/2 purple onion
1 c raisins (or dried cranberries)
1 c roasted sunflower seeds
For the dressing:
1 c mayo
1/2 c sugar
2 Tablespoons white vinegar
1/2 tsp pepper
What To Do
Slice the bacon into 1/2″ pieces and fry until cooked. Place on a paper towel to absorb excess oil and let cool.
Cut the broccoli into small pieces – about 1 inch – and put into a bowl. Mince the 1/2 of onion into very small pieces and add to the bowl. Mix in the onion, raisins and sunflower seeds and toss until well combined.
In a separate bowl, measure the mayonnaise and stir in the sugar. Add the vinegar and stir until the sugar is dissolved then add the pepper.
If you are serving right away, you can add the bacon to the broccoli and then toss with the dressing. If you are serving later or the following day, keep the dressing and bacon separate until right before serving. This will keep the bacon crisp and prevent the veggies from getting soft in the dressing.
