Bacon…..Oh, and Dates & Goat Cheese

I have the perfect recipe to bring with you to your next party .  It’s quick and easy, but more importantly – delicious!  There isn’t much to the recipe but these babies are addicting and something you can pull together in about 45 minutes.  Also – you can make these a day or two in advance and then reheat in a warm oven and they’ll taste just made – bonus!

What You’ll Need

4 oz goat cheese
1 package of bacon (about 12 strips)
1 package of pitted dates

What To Do

Slice each strip of bacon into thirds.

Make a cut into each date, turning it into a U shape.  If they split a little too much (like the one below, not to worry; the bacon will seal it up!

Take a small piece of goat cheese (about 1/4-1/2 tsp) and stuff into each date, closing them up as much as possible. 

Wrap each date with one piece (1/3 strip) of bacon, and pierce through with a toothpick.

Place on a lined sheet pan and bake on 350 degrees for about 20-25 minutes, flipping halfway through.  

Once the bacon is fully cooked, you can serve immediately or let cool, refrigerate, then rewarm under the broiler in the following day or two.
