Asian Inspired Sweet & Spicy Chex Mix

As the holiday season moves into full swing, there are parties, work gatherings, pot lucks, and chances are you’ll need to bring something to share.  I created this quick and easy snack mix for a party at our place over the weekend.  I wanted something that was sweet with a little spice and I think these hit the mark!

What You’ll Need

1 box – honey Chex
1 box  – rice Chex
1/2 bag pretzel twists
4 oz roasted peanuts
4 oz salted almonds
4 oz pecan halves
4 oz dried cranberries
1tsp Sriracha spice

For the glaze:
1 stick butter
1/4 c honey
1/3 c brown sugar
2T peanut butter (or 1/3 c peanut butter chips, or 1/4c PB2)
1/4 c Sriracha

What To Do

In a large bowl, combine the cereal, nuts and pretzels.  Then, in a small saucepan, melt the butter, add the honey and brown sugar until smooth.  Then, add the peanut butter and Sriracha.  Cook over medium heat for 3 minutes, stirring constantly while allowing to bubble slightly.

Pour a small amount of the glaze over the cereal mix and stir with a wooden spoon.  Continue to add small amounts of the glaze until you’ve coated the entire batch.  Note that the glaze will not cover every square inch of the mix but you should have most pieces covered.  While still warm, sprinkle with the Sriracha spice and stir well.  Spread on 2 sheet pans and let cool & harden.
